This is a another quick, easy, healthy, simple recipe. Featuring peppers which are loaded with vitamin C and other essential nutrients and antioxidant plant chemicals. The peppers add a sweet taste to the goulash and make this classic dinner dish a favorite for all!
Serves 4
Ingredients
1 Tablespoon Extra Virgin Olive Oil
5 cloves garlic chopped fine
1 pound ground turkey (no skin or fat added)
2 medium or 1 giant green, yellow or red pepper chopped
10 large mushrooms sliced
1-28 ounce can crushed tomatoes
1-1/2 cup of chopped fresh herbs such as oregano and tarragon
1/2 pound rice macaroni or other gluten free pasta (half of a package) or if you are not sensitive to gluten use whole wheat pasta
Directions
Heat a stainless steel or cast iron skillet on medium heat for a few minutes. Add oil and garlic and sauté for a few more minutes. Then add the rest of the ingredients to the skillet and simmer until the vegetables are soft and the turkey is cooked through (about 20 minutes). Cook pasta according to package directions, drain. Combine Turkey mixture with pasta and enjoy!
