By choosing ground turkey instead of the typical pork sausage found in the American breakfast you are cutting the calories in half and reducing the carbon footprint of your protein source. Organic poultry is grown without antibiotics and hormones and fed grains that have been grown without pesticides.

Nutrition Attributes: Poultry is a concentrated source of high-quality protein, heme-iron, zinc, and B-12; nutrients that are important to health but difficult to find in plant foods. The pepper adds a sweet, crispy texture and vitamin C to this recipe. Yum!

Ingredients

1-pound organic ground turkey (7% fat)
1 large Serrano pepper, diced
1 medium onion, diced (about 1 cup)
1/4 cup tablespoons plain breadcrumbs (for gluten free diet use crushed rice crackers)
1 egg
1 teaspoons poultry seasoning
½ teaspoon pepper
½  teaspoon salt
2 tsp olive or organic canola oil

Substitutions: In place of Serrano pepper use red, green, or other fresh pepper.

Shopping Tips: Choose breadcrumbs with less than 250 mg sodium and 2 g fat per ¼ cup.

Directions

  1. Mix all ingredients in a large bowl, making sure that all spices are thoroughly stirred in. Form into 8 patties.
  2. Heat oil in large fry pan on medium heat. Cook patties until brown then flip to other side. Continue cooking until done and no pink remains (about 4-5 minutes on each side).
