This dip is super easy and quick to prepare. It features protein-packed tofu and antioxidant-rich, delicious cilantro. Cilantro contains a compound called dodecenal which has antimicrobial properties (studies have found cilantro to be as effective as antibiotics at killing salmonella). This makes a great mid-afternoon snack served with your favorite raw veggies!
Makes 4 servings
½ cube very firm tofu
1 cup (packed) cilantro leaves
¼ cup Veganaise
1 teaspoon garlic powder
(a little chopped jalapeno is optional)
Put everything into a mini food processor and process until smooth.
