Turkey Breakfast Sausage

By choosing ground turkey instead of the typical pork sausage in American breakfast fare you are cutting the calories in half and reducing the carbon footprint of your protein source. Red meat, especially red meat produced in factory farms is very hard on the environment. The pepper adds a sweet, crispy texture and vitamin C to this recipe. Yum!
1 pound ground turkey (7% fat)
1 large Serrano pepper, diced
1 medium onion, diced (about 1 cup)
1/4 cup tablespoons plain bread crumbs (for gluten free diet use crushed rice crackers)
1 teaspoons poultry seasoning
½ teaspoon pepper
½ teaspoon salt
2 tsp olive or organic canola oil
Substitutions: In place of Serrano pepper use red, green, or other fresh pepper.
Shopping Tips: Choose breadcrumbs with less than 250 mg sodium and 2 g fat per ¼ cup.
- Mix all ingredients in a large bowl, making sure that all spices are thoroughly stirred in. Form into 8 patties.
- Heat oil in large fry pan on medium heat. Cook patties until brown then flip to other side. Continue cooking until done and no pink remains (about 4-5 minutes on each side).
